A Barrel-Aged Collaboration Made in Iowa

Organic Colombian Tolima, aged in an Iowa Distilling Co. whiskey cask barrel - a three-maker craft between FreeBird, Iowa Distilling, and Hancock Woodworks.

BARREL + ROAST PROCESS

These Colombian Tolima beans were patiently aged for weeks inside an active whiskey cask, allowing the green coffee to rest, breathe, and absorb faint caramel, oak, and char notes from the staves.

Once the barrel gave what it could, FreeBird slow-roasted the beans to preserve origin clarity while elevating the whiskey-wood character — and Hancock Woodworks then transformed those same staves into handcrafted adarondak chairs.

A closed-loop collaboration of Iowa craft — coffee, whiskey, and wood — made to be shared slowly and enjoyed fully while supporting mental health in Iowa with donations to Mindspring Mental Health Alliance.

After aging Iowa Distilling Co. whiskey and lending character to FreeBird’s limited barrel-aged Colombian Tolima, the staves from one special cask were transformed by Hancock Woodwork into a single handcrafted whiskey-stave chair.

We’re auctioning this one-of-a-kind piece to support Mindspring Mental Health Alliance, helping expand mental health education and resources across Iowa.
